2 tbl spoons butter
1 onion
1 lb carrots
1/2 liter veg. broth
100 grams mild feta cheese
3 tb spoons port
2 tb spoons chopped fresh dill
salt and pepper to taste
sour creem and fresh dill for garnish


sautee the onions in the butter, then add the slices carrots, broth, salt and pepper and bring to a boil.  Then simmer on low for 30 minutes.  The coof off and puree in blender with the crumbled feta cheese.  Then put back in pot and just bring to a boil. Remove from heat and add the port and dill (if seving hot).  If serving chilled, cool off first and then add port and dill right before serving.</description>
